Almond Flour Chocolate Chunk Cookies


These cookies are to die for, they’re soft and chewy, super flavorful and you don’t feel like you’re missing something like you do with a lot of gluten-free baked goods! Even if you don’t avoid gluten, these cookies are for you! They’re lower in simple carbs, higher in protein and healthy fats, and I used coconut palm sugar to sweeten them which is much lower on the glycemic index and far less processed than white sugar!


Gluten

Hear me out; gluten is a really complicated topic and there is WAY too much misinformation and uneducated opinions out there about it! Gluten is not always the enemy, and not everyone reacts to it and therefore needs to avoid it! HOWEVER, there are a lot of instances where gluten can be a major player in a lot of health issues. Everyone is individual, and everyone’s body handles things differently (including gluten) so there is no “one size fits all” when it comes to topics like these!


Ingredients:

  • 1/2 cup ghee (I use fourth and heart https://fourthandheart.com/product/original-ghee/)

  • 1/3 cup extra virgin coconut oil (melted)

  • 2 pasture-raised eggs

  • 2.5 tsp vanilla extract

  • 3/4 cup coconut palm sugar

  • 1/2 tsp salt

  • 1/2 tsp baking soda

  • 2 cups blanched almond flour

  • 1 cup coconut flour

  • 3/4 cup dark chocolate chunks

  • 1/2 cup white chocolate chips

Recipe:

  1. Preheat oven to 350 degrees and grease a cookie sheet with melted coconut oil

  2. Beat together the butter, oil, vanilla, eggs, and sugar

  3. Add coconut and almond flours, salt and baking soda

  4. Mix in chocolate chunks and white chocolate chips

  5. Form 1 Tbs balls of dough and flatten onto the cookie sheet (They keep their shape while baking)

  6. Bake for 8 minutes or until lightly golden brown (you don’t want to overcook them, this way they will stay soft)
